We will have sommeliers Laura Madera Nadal from Pio Pio Champagne Bar and Michelle Negrón from Cocina Abierta to guide you on the perfect pairing of the natural wines available in this immersive experience. There will also be a kiosk for you to enter the world of ecological wines.

In addition to the gastronomic tour, there will be workshops and historical tours to make your visit more flavorful. Join us to celebrate harmoniously with nature these culinary proposals that lead us to the conservation and healthy coexistence of the archipelago of Puerto Rico.

Introduction to Organic and Biodynamic Wines

Organic, biodynamic, and natural wines are not a new trend, but rather a way of understanding wine that originated in France and has spread worldwide. It is a reconnection with traditional viticulture and its methods, free of the effects of the global wine market. In this interactive workshop we will explore the key concepts of minimal intervention wine, its agricultural origins, how to choose wines with low environmental impact and how to be more conscious and wiser consumers. What is in our glass and how did it get there? As consumers we now require more transparency, wines with little to no additives and less homogeneity. Wabi Sabi. In this guided tasting of 4 wines of very different styles, we will rediscover wine as an approachable, understandable, and fun pleasure that also speaks to us about its origins, its terroir, and can also have a positive impact on our planet, without the constraints of modern transformative winemaking practices.

Cacao’s Rich Heritage in Puerto Rico

Embark on a delectable journey through Puerto Rico’s heritage in cacao including its production, its recent growth, and explore a diverse array of cocoa varieties like forastero, amelonado, trinitario, and criollo. Immerse your senses with a sample of local chocolate, engage in a spirited Q&A session and wrap it all up with an irresistible chocolate presentation. Join us for a mouthwatering exploration of Puerto Rico’s cacao culture!

Sustainable Farming & Artisanal Goat Cheese Demonstration

Learn about the importance and health benefits of sustainable farming, food security, and home gardens. We’ll show you how we milk the goats, learn about proper farm animal care and how to make artisanal goat cheese. At the end of our time together, you will be able to try cheese and marmalade samples made at the farm.

For the first time at this year’s event, we will have the Mercado para la Naturaleza: an opportunity to connect with initiatives and products that bring us closer to an ecological culture. You will be able to support and get closer to the farmers, whose harvests will be featured in the chefs’ creations that day. You will also find eco-friendly items to integrate into your daily life.
